Es sabido que en la \u00e9poca precolombina se produc\u00edan algunas variedades de pan hecho de harina de amaranto, ma\u00edz o mezquite revuelto con miel. La cultura francesa influy\u00f3 en la vida cotidiana y claro en la cocina mexicana. Al poner atenci\u00f3n en la consistencia y preparaci\u00f3n del bolillo, se pueden observar caracter\u00edsticas heredadas de la panader\u00eda francesa.<\/span><strong style=\"font-style: inherit; font-variant: inherit; font-stretch: inherit; font-size: inherit; line-height: inherit;\"><span style=\"font-size: 14.5pt; font-family: inherit, serif; border: 1pt none windowtext; padding: 0cm;\">\u00a0La crujiente capa en el exterior, que resguarda el suave y esponjoso interior<\/span><\/strong><span style=\"font-size: 14.5pt; font-family: Arial, sans-serif;\">, es una herencia francesa que sufri\u00f3 algunos cambios al ser adoptada en nuestro pa\u00eds. font-variant-east-asian: inherit; font-stretch: inherit; line-height: inherit;\"><span style=\"font-family: 'Arial','sans-serif'; border: none windowtext 1.0pt; mso-border-alt: none windowtext 0cm; padding: 0cm;\">despu\u00e9s de dejarla podrir, descubri\u00f3 la f\u00f3rmula. Pirotte se volvi\u00f3 muy popular y querido por los tapat\u00edos\u00a0<\/span><\/strong>debido a que regalaba a la poblaci\u00f3n el pan que no se vend\u00eda despu\u00e9s de 48 horas.
